Dalgona Coffee, also known as 'whipped coffee' or 'cloud coffee,' became a global sensation during the 2020 pandemic lockdowns, though its origins trace back to South Korea and India. Named after a Korean honeycomb toffee that shares its golden-brown color, this photogenic beverage is made by whipping equal parts instant coffee, sugar, and hot water until they transform into a thick, creamy foam that sits atop cold or hot milk. The process of creating the foam requires several minutes of vigorous whipping, during which the mixture undergoes a fascinating chemical transformation.
The science behind Dalgona's signature texture lies in the surfactant properties of instant coffee and the crystallization of sugar, which together trap air bubbles to create a stable foam.
